Pizza Studio Tamaki Makes Sydney Debut

Tokyo-based Pizza Studio Tamaki has opened in Sydney, bringing its blend of Neapolitan pizza and Japanese craftsmanship.

Sydney's food culture is evolving with the arrival of Pizza Studio Tamaki, an acclaimed Tokyo-based pizzeria making its arrival at 259 George Street near Circular Quay in Sydney. Founded by pizzaiolo Tsubasa Tamaki in Tokyo in 2017, the restaurant has gained international recognition for blending traditional Neapolitan pizza techniques with Japanese precision.

The Sydney venue formally opened on May 16, 2026, and is now the brand’s largest location worldwide. Known for its 30-hour fermented dough, high-temperature wood-fired ovens and minimalist Tokyo-inspired design, PST’s reinterpretation of Italian pizza has earned No. 18 in the 2024 50 Top Pizza Asia-Pacific list and No. 10 at The Best Pizza Awards 2025 in Milan.

Japanese cuisine has grown rapidly in Australia over the past decade. What was once largely associated with sushi trains and casual takeaway now spans everything from French-Japanese fine dining such as Oborozuki to premium omakase venues like Yoshii’s Omakase, alongside Japanese-inspired cafés and sandos across Sydney. The trend points to a growing appetite for contemporary Asian dining that blends traditional influences with modern and local styles.
